- You need 4 lbs boneless skinless chicken thighs
- Provide 4 Tbsp extra virgin olive oil
- Take 2 medium onions, small dice
- Use 3 jalapeños, seeded and small dice

- Get 2 tsp fresh ginger, grated
- Take 4 Tbsp dried basil
- Get 3 Tbsp yellow curry powder

- Add in coconut milk and stir to combine.
