- Use 2 beef steaks (I used bone-in striploin)
- Prepare 1 small handful fresh thyme
- Provide 1 large shallot, chopped
- Prepare 50 g gorgonzola, thinly sliced or broken into small chunks
- Get 2 green figs, quartered
- You need Good quality aged balsamic vinegar for drizzling
Instructions to make Steak with caramelized figs, blue cheese and balsamic:
- Add a splash of olive oil and a pat of butter to a large pan on high heat. Season the steaks well with salt and freshly cracked black pepper, and sear them for 3 to 4 minutes on one side.
- Flip the steaks over and lay the thyme sprigs on top. Add a few more tbsp of butter to the pan and let it melt. Baste the meat and thyme with the melted butter for another 3 to 4 minutes.
