  1. In a frying pan, pour the oil and heat up for few seconds. When hot, fry ur salted fish and set aside
  2. Perboil ur rice for 7- 10mins and rinse with cold water very well to remove starch and set aside
  3. Pour the oil used to fry the fish(I used just little cos there is enough oil in the leftover stew) in a pot, put ur chopped onions and fry for few seconds, add ur chopped pepper, then the tomato paste.
  4. Now add ur seasonings except salt and maggi and let the tomato paste fry for few seconds untill the oil start showing on top.
  5. Pour in ur leftover stew and add the fried fish into it. Season with the maggi and salt then cover to boil for 5 mins. The fried fish in the mixture will give it a different taste entirely πŸ˜‹πŸ˜‹.

  8. Give it a good stir, add ur fish on top and cover for about 10mins. Your Jollof is ready. U can serve with fried plantain.
