- Break the eggs in a big bowl and whip them nicely, I normally use an electric beater. Now add chopped onions, tomatoes, capsicum, green chilies, green coriander and salt. Mix well.
- Heat a tawa/girdle. Spread some butter and pour half of the egg mixture on it. let it cook till it's golden. Then flip carefully to cook on the other side. Fold the omelette in 3, to make a rectangle shape approximately. Remove in plate or if your tawa is big move it on a side.
- Now cut 2 pav buns in half horizontally, spread more butter on the tawa and sprinkle some red chilli powder and green coriander. Put the pav buns on the tawa with the cut side down. Roast till golden brown, now flip and roast on the other side as well.
- Apply some green chutney on the buns. Place the omelette on the roasted buns on the bottom half and apply some tomato ketchup on the omlette.
- Now place the top half of the bun on the top of the omelette. Press down nicely. Serve with a hot cup of masala tea.
