The ingredients needed to prepare Aloha Cherries:
- Take 2 lb cherub (grape) tomatoes, sliced lengthwise in half
- You need 1 large Maui sweet onion sliced very thinly with a mandoline if you have one
- Take 1/4 cup cider vinegar
- Take 2 tbsp brown sugar
- Provide 1 1/2 tbsp kosher salt
- Prepare 2 cloves garlic minced
- Take 1 tsp black pepper, fresh ground is best
- Get 4 small whole dried Hawaiian chili peppers, ground (red pepper flakes can be used 1 1/2 T)
- Use 3/4 cup Avocado oil (olive oil works)
- Provide 2 tbsp dry parsley, I grind it between my hands to break it up
- Provide 1 1/2 tsp thyme or herbs de provence (prefer the HDP)
Instructions to make Aloha Cherries:
- Grind your chilies
- Mince your garlic…. you can use granulated garlic (3tsp) instead.
- Put your spices, salt, sugar, vinegar, and oil in a bowl and whisk together well. Set aside, this is your marinade.
- Slice your tomatoes lengthwise and place in a large bowl.
- Slice your onion as thinly as possible and add to the bowl with your tomatoes.
- Whisk your marinade well again and pour it over top of your onion/tomato mix.
- Very lightly toss your Aloha Cherries.
- Allow your amazing Aloha Cherries to marinate at least a few hours for best flavor. Overnight is even better.
- Your friends will love it if you serve this with some bocconcini, bite sized mozzarella balls! If you do tho remember to put them in no more than half hour before you serve. They will get slimy.
