The ingredients needed to make Cauliflower & Potato Mash Instant Pot IP:
  1. Prepare 3 potatoes
  2. Prepare 2/3 head cauliflower (about)
  3. Use 1/2 cup sour cream
  4. Use 1 1/2 tsp. Salt (kosher)
  5. Provide 3/4 tsp. Pepper (to taste)
  6. You need 2 tsp. Garlic powder
  7. Provide 1/4-1/2 tsp. Cayenne pepper (optional)
  8. You need 1 1/2 cups water

  1. Steamer basket I am using for this.
  2. Add water to IP liner, place steamer basket in the liner
  3. Cut your potatoes about like this (left one), add to liner
  4. Now I like to use approximately half potato and half cauliflower, so cut out some florets, I just use my best judgement, and guess, it is usually close enough.
  5. Add to liner, on top of the potatoes.
  6. Set your IP to pressure cook, high, for 8 minutes. Let it do it's thing.
  7. Quick Release (QR) pressure when the time is done. Drain veggies.
  8. Now, normally I would just do the following in the IP liner, however I'm making another dish to go with this, so I am using an oven safe bowl, to finish it, and place that in a 225F oven to keep warm while making the Cube Steak with gravy in the IP.
  9. Add 1 tsp. salt to start with the black pepper, sour cream and garlic powder (butter if you want). Give it a good mash. Then taste it.
  10. Adjust seasoning, I needed to add 1/2 tsp. salt. Also add, If using Cayenne, mash it up to your liking.
  11. It's ready to serve, I put mine in the oven to keep warm until I'm done with the protein part in the IP also.
