- You need 2 pounds beef cubes
- Prepare 2 pounds carrots, peeled and cut in 1" pieces
- Use 2 large celery sticks, coarsly chopped
- Prepare 1 large red onions, coarsly chopped
- Use 2 cloves garlic, minced
- Use 1 cup carrot juice
- Provide 1 cup beef broth
- Provide 4 tablespoon extra virgin olive oil
- Take 2 tablespoon unbleached flour
- Use 1 teaspoon fresh ground fenel seeds
- Take 1 teaspoon dry thyme
- Provide to taste fresh ground black pepper
Steps to make Beef & carrot stew (slow cooker):
- Lay the carrots and celery at the bottom of the slow cooker. Cover with carrot juice and sprinkle with the herbs & black pepper.
- In a large fry pan, heat up 2 tablespoon of olive oil at medium/high and brown the beef cubes. Transfer to slow cooker.
- In the same fry pan, heat the leftover olive oil, lower heat to medium and cook the onions with the garlic 1 minute.
- Sprinkle with flour and cook for another minute stirring constantly.
